Pancakes for One

On my lonely mornings I  treat myself to a bigger breakfast, my mind goes straight to pancakes. But I run into the issue of always making too many, and the extra sitting in the fridge for the rest of the week. So, I’ve come up with a recipe that makes 4 pancakes. The perfect amount for one person. They are thick and fluffy and only take 20 min to prep!


  • Stove top
  • small-medium pan
  • medium bowl
  • whisk
  • measuring cups+spoons
  • spatula


  • 1 cup of all-purpose flower
  • 1 egg
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tbsp sugar
  • 1 1/3 tbsp butter
  • 3/4 cup milk
  • pancake toppings (fruit/maple syrup ….)


Whisk together all ingredients in your mixing bowl. Heat up your pan on medium-high heat. Once the pan and mixture is ready, pour whatever desired amount of batter on the pan (however large you like your pancakes). And wait till bubbles appear on the surface and the spatula easily slides under the pancake. Then flip he pancake and let cook until the bottom is cooked (when golden). Scoop up the pancake, put it on a plate, and continue this process till you’ve used all the batter!

Now you can add toppings and enjoy!
